Red Ruby Beef
Many Food Connoisseurs and Top Chefs have always been devotees of Red Ruby Beef. It is probably the best beef you can buy. Red Rubies are a traditional breed whose flavour has not been bred out by the trend for low fat meat.
The meat is naturally marbled so remains moist during cooking and the slow growth rate of the cattle adds to both flavour and tenderness.
The cattle graze all summer on traditional Exmoor pastures. In the winter they are supplemented with home-grown feeds.
The cattle only leave the farm when we take them to a small local abattoir. This avoids the enormous stress of a long journey with other cattle which in turn, adds immeasurably to the final meat quality.
The meat is then hung in a traditional manner to obtain maximum tenderness.
